Old-Style Three-Cheese Baked Mac and Cheese

A Creamy, Cheesy Delight with a Crunchy Topping

Ingredients:

  • 1 lb elbow macaroni
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, grated
  • 1 cup Gruyère or Fontina cheese, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 teaspoon mustard powder
  • Pinch of nutmeg
  • Salt and black pepper to taste
  • 1 cup breadcrumbs
  • 2 tablespoons butter, melted (for breadcrumbs)

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Cook the macaroni in salted boiling water until al dente. Drain and set aside.
  3. In a large saucepan, melt 4 tablespoons of butter over medium heat. Add the flour and whisk for about 1 minute to form a roux.
  4. Gradually whisk in the milk and cream, and bring to a simmer. Cook until the sauce thickens.
  5. Remove from heat and stir in the cheddar, Gruyère, and half of the Parmesan cheese until melted. Season with mustard powder, nutmeg, salt, and pepper.
  6. Add the cooked macaroni to the cheese sauce and stir to combine.
  7. Pour the mixture into the prepared baking dish.
  8. In a small bowl, mix the breadcrumbs with melted butter and the remaining Parmesan cheese. Sprinkle this over the macaroni.
  9. Bake for 20-25 minutes, or until the top is golden and bubbly.
  10. Let it cool for a few minutes before serving.
