Ideal for a comforting family dinner or a hearty sandwich filler, this meatloaf is sure to become a new favorite in your culinary repertoire.

  • 2 lbs 80/20 ground beef (the fat content is key for a juicy meatloaf)
  • 1 small diced yellow onion
  • 2 eggs
  • 1/2 cup milk
  • 1 cup breadcrumbs (or crushed crackers for a twist)
  • 1/4 cup ketchup (plus extra for topping)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • Sea salt and black pepper to taste

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, diced onion, eggs, milk, and breadcrumbs. Mix well.
  3. Add ketchup, Worcestershire sauce, garlic powder, parsley, thyme, sage, salt, and pepper. Mix until all ingredients are well incorporated, but try not to overmix as this can make the meatloaf tough.
  4. Transfer the mixture to a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
  5. Spread a thin layer of ketchup over the top of the meatloaf for a classic glaze.
  6. Bake in the preheated oven for about 1 hour or until the meatloaf is cooked through (internal temperature should reach 160°F or 70°C).
  7. Let it rest for 10 minutes before slicing. This helps the juices redistribute.

  • Soaking the breadcrumbs in milk helps keep the meatloaf moist.
  • Don’t pack the meat too tightly in the pan. A lighter touch will yield a more tender meatloaf.
  • For a less “herby” taste, you can reduce the amount of sage and thyme or omit them entirely.
